Ehime has two taimeshi. In the east and centre of the prefecture, which takes in Imabari, a grilled sea bream is cooked into the rice with kelp stock, and the flesh is flaked through it once the pot comes off the heat. Around Uwajima in the south, taimeshi means raw sea bream sashimi dressed in a soy sauce with raw egg and sesame and spooned over hot rice.
The cooked version is the one you find at Japanese restaurants in Imabari and Matsuyama as a single-portion kamameshi set, and the Imabari Station ekiben mixes flaked bream into seasoned rice.
Worth knowing
- A pot taimeshi takes time to cook, so order it at the start of the meal.
