Kubota has stood in front of Minakami Station for over 60 years and is now run by the third generation, a husband and wife. They grind Minakami buckwheat on stone each morning and bind it with rice flour for a nihachi soba, and the sanshoku kinoko soba, three local mushrooms with a big maitake tempura, is the most popular bowl. In winter they add okkirikomi, wide Joshu-flour noodles stewed with local vegetables, mushrooms and mugi-buta pork.
