Sendai's official tourism guide says gyutan yaki was worked out by trial and error after the war by Sano Keishiro, owner of Tasuke. His shop, now Aji Tasuke, dates its opening to 1948 and still serves the set he devised: grilled salted tongue with oxtail soup and barley rice. Kisuke, founded in 1975, helped turn the dish into the city's signature and made it known across Japan, and Tanabe-ya near Kita-Yobancho Station is run by Sano's grandson.
The guide compares shops on three things: how strongly they season it, how far they grill it and how thick they cut it. Some keep to salt, others marinate in Sendai miso or a spicy miso, and several make stews, curries and oxtail dishes from the same cuts. Most serve it as a teishoku, a set meal, and the classic version comes with barley rice and oxtail soup.
Worth knowing
- Try two shops on a two-night stay. Sendai's guide groups them by seasoning, cooking and thickness, which makes a comparison easy.
