Served 2026 Minamiuonuma Koshihikari in its restaurants from September 2026.
Koshihikari is the rice variety, and Uonuma is the snow country of southern Niigata that gives this rice its name. Tokamachi's tourism office lists it with the region's spring greens and autumn mushrooms as the food the land gives after the long winter.
You meet it everywhere in the region. NASPA New Otani in Yuzawa started serving 2026 Minamiuonuma Koshihikari in September, and at Echigo-Yuzawa Station the onigiri counter in Ponshukan cooks contract-farm rice in a hagama pot and shapes it to order.
Inns in Myoko and Suginosawa grow and serve their own Koshihikari too, so ask your host where the rice on the table came from.
