Niigata sake
新潟清酒Sake
Niigata sake suits drinkers who want to work through a whole prefecture's cellar on one trip, and its catch is the sheer number of labels, with 91 member breweries in the prefecture's guild.
The Niigata Sake Brewers Association counted 91 member sake breweries in February 2026, far more than any visitor could get through in a week.
The quickest survey is the kikizake corner at Ponshukan in Echigo-Yuzawa Station, where ¥1,000 buys five tastes from machines covering every brewery in the prefecture. In Minamiuonuma, Hakkaisan's Uonuma no Sato stores sake in a snow-cooled warehouse you can tour. In Arai, Kiminoi has brewed since the 1830s and still makes Yamahai sake the slow way.
The guild has announced the next Niigata Sake no Jin festival for 2027, and Myoko Tourism advertised a chartered sake train tour round the breweries of Joetsu, Itoigawa and Myoko for 1 November 2026.
