Where to eat Hiroshima okonomiyaki · 2 places
Before the war, Hiroshima ate issen yoshoku, a thin pancake topped with green onion and bonito flakes. After the atomic bombing in August 1945 it became cheap food for survivors, and vendors made it with whatever they could find. Stalls that sprang up around 1950 during the city's recovery, later Okonomimura, turned it into the layered dish known today.
The cook layers the ingredients instead of mixing them: batter, a tall pile of cabbage that cooks down, pork, then yakisoba or udon, a fried egg and plenty of sauce. A Hiroshima okonomiyaki uses three to four times the cabbage of the Osaka style. Islands on the route have their own versions, such as Innoshima's in-oko with udon, and Onomichi-yaki.
