What to order
- Cold soba
Shinbashi has made soba by hand in Yuzawa for 85 years to a family method. It mills its own flour from buckwheat grown around Yuzawa, Minamiuonuma and Ojiya, and uses Uonuma spring water for every step.
It opens from 11:00 to 20:00, closes once the day's soba runs out, and shuts on Wednesdays with seasonal changes. Payment is cash or PayPay.
