The downtown curry house Tanaka ran with a partner before he went his own way; it still trades under the Turban name.
Kanazawa curry is a diner style from Ishikawa. The thick roux covers all the rice and a pork cutlet sits on top under a line of sauce. Shredded cabbage comes on the side of an oval stainless-steel plate, and you eat with a fork or a split-tipped spoon. Champion Curry notes that not every shop follows every rule.
Champion Curry says the name itself only came into use around 2005. Its own history traces the cooks behind several of the old houses to a postwar Kanazawa restaurant called New Kanazawa, around 1955, where its founder Yoshikazu Tanaka worked. Tanaka opened Yoshoku Tanaka in 1961, and the company counts his recipe as the start of the style. In 2013 NTT's Town Page found that Ishikawa had more curry houses per 100,000 people than any other prefecture.
