Nishicho Taiki suits anyone who wants Toyama black ramen at the address where it started, and its trade-off is a bowl salty enough that most people order rice with it.
What to order
- Chuka soba with a bowl of rice
Toyama's tourism association names the original Taiki as the source of Toyama black, and this shop stands where it was founded. The first Taiki closed for a time, and a new team took over the name as Nishicho Taiki after customers asked for it back. The menma (bamboo shoots) are seasoned hard enough to eat with rice. The salty seasoning goes back to the bowls the shop made for manual workers who needed salt.
A plain chuka soba costs ¥950. Stir the noodles, toppings and broth together before you start, as the tourism association advises, so the salt evens out. The shop is one minute from the Grand Plaza-mae tram stop and close to the Toyama Glass Art Museum.
