Masuya
但馬生蕎麦 ますや35°38′ N 134°49′ ESoba
Masuya suits a bowl of handmade Tajima soba between baths in Kinosaki, and its trade-off is a short evening sitting and cash-only payment.
What to order
- Kamo zaru soba, cold soba with hot duck broth
- Kani zosui, crab rice porridge
Masuya makes its soba by hand from Hyogo buckwheat and Kinosaki's own water, which the shop says filters through the mountains after the winter snow. The tourism association's listing says buckwheat grew better than rice on this thin soil, so soba became the dish for guests, bound with grated mountain yam.
The duck dipping soba is the shop's best seller: cold noodles in a hot duck broth. Crab rice porridge and a crab and sweet shrimp bowl cover the local seafood.
Worth knowing
- Dinner runs only from 18:30 to 19:30, so most visitors come at lunch.
